Well - look at that - I haven't posted here since October! Sorry guys!

To be honest, as much as I love blogging - I don't really enjoy blogging about myself or peddling my stuff. What I really enjoy is sharing other artists work and every once in a while something about my work.

With that said - I have started an indie blog called Keeping It Indie. Keeping It Indie is a site dedicated to supporting independent artists and small business. We are here to feature exceptional handmade goods, inspire creativity and encourage a way of life that values quality over quantity.

Scarf Photo Shoot This Weekend

This weekend was my first attempt at a photoshoot with a real model. My lovely college friend Alecia was kind enough to model for me. The biggest issue was finding a spot mid-day with soft shade and while the shoot went really well - a few shots didn't turn out due to some issues with my knowledge of my camera settings and 2 the spot that I picked was PERFECT light but too busy.

Anyway - for some of the shots the background felt very overpowering so I did a cutout for this shot and am wondering how you all feel about this new white barn wall? It feels like it is more usable for features being that the background is less powerful and more neutral.

What do you think?

Chloe is 10 Months Old

So my little puppy is 10 months old this week so I just had to share! She is the cutest dog on earth - ok - I might be a little biased! You can see her from baby to now HERE. She is now about 8-10LBS - she was 8LBS at 6 months and has grown just a little!

In thinking about this weeks Illustration Friday theme - Remedy - the first thing came to mind was what would people be trying to remedy. I think stress is a big one with all that most people have going on in their daily lives. One remedy for stress is a good book and a strong cup of coffee!!!

TITLE: Wake Up Henry!

What am I working on today? Thought I would share some progress shots as I illustrate. I know - I started pretty late but you can clearly see how the right side of my guy is about done while the left side is how the drawing started. The first image is the face sketch that I created right in illustrator. No background at all yet.

Henry is being created for full color vector but will also be made into a 3 color job for letterpress once I am finished with the full color job.

I will share again when I get the full figure done then when I start the background and finish the background.

MONDAY MUNCHIES: Double Chocolate Covered Strawberries

Simplest yummy valentine gift EVER! These are so simple you can make them with your kids to include them in the fun. Enjoy!

Double Chocolate Covered Strawberries

2 6 oz. dark chocolate bars (or 12 oz. dark chocolate)
1 tsp. butter
1 quart strawberries
6 oz. white chocolate candy melts or white chocolate chips

1. Line a baking sheet with waxed paper or parchment paper.

2. Break up chocolate, and place in the top of a double-boiler with butter. Melt completely. Or place chocolate pieces and butter in a microwave-safe container and heat on 50% power for 30 seconds. Stir and repeat until melted.

3. Meanwhile, wash strawberries and dry well with a paper towel. Chocolate strawberries need to be dry for the chocolate to adhere to the strawberries.

4. Holding strawberries by the stem, dip in chocolate, coating strawberries well. Let excess chocolate drip off strawberries. Place chocolate strawberries on prepared baking sheet to cool completely.

5. Place white chocolate candy melts or chips in a microwave-safe container. Heat on 50% power for 30 seconds. Stir and repeat until melted. With a fork, drizzle white chocolate over chocolate strawberries. There's no need to take chocolate strawberries off the baking sheet. Just let the excess white chocolate drizzle onto the waxed paper.

6. Let chocolate strawberries cool completely. Refrigerate until ready to serve. Makes 1 quart dark and white chocolate strawberries.

MONDAY MUNCHIES: Peanut Butter, Banana & Berry Salad

In my mind - there will never be enough ways to use Peanut Butter! Here is a fun way to incorporate Peanut Butter into your SALAD - yeah!

Peanut Butter, Banana & Berry Salad

2 medium bananas, sliced
2 tablespoons lemon juice
2 cups shredded romaine lettuce
1 cup sliced strawberries or raspberries
1/4 cup chopped peanuts

PEANUT BUTTER DRESSING
2 tablespoons creamy peanut butter
1 tablespoon honey
1/2 cup low-fat vanilla or plain yogurt
2 tablespoons orange juice

1. Combine all the dressing ingredients in a blender and process the mixture until smooth.

2. In a small glass bowl, gently toss the banana slices in the lemon juice to keep the fruit from browning.

3. Divide the lettuce among four serving dishes and then top it with the bananas and berries. Drizzle peanut dressing over each salad and garnish with chopped peanuts. Serves 4.

What Does Your Space Say About You?

The holiday season left my studio in quite the shambles! Right now my studio would be saying - I am a pig sty, you are so unorganized and a bit lazy! Here are some tips on creating a good workable home studio:

1. Set up a permanent work space
If you are trying to build your art into a business you really need a dedicated space in your home for a studio - even if it might be a small one. Without a designated space you will be consistently setting up and taking down your set-up which is a huge time waste.

2. Create a room of inspiration
Your space does not have to be large or expensive - just tidy and a reflection of you. Surround yourself with inspirational materials and simple home decor items that make your area feel fresh and inviting. Be sure your organizational system allows for easy access to your materials and is well organized.

3. Turn up the light
Insufficient lighting is not only bad for your eyes but if you are shooting your images in your area - bad lighting can make or a break your photo shoot. The best lighting for both artwork and photography is natural lighting so if your area has a great window - be sure to use it. Otherwise consider energy efficient daylight bulbs for your studio.

4. Source out ideas
Find images in magazines or online of studio organization ideas that inspire you. I have created a treasury filled with great organizational I found on Etsy to give you a start. Collect these and take them with you when shopping for your studio decor.

5. Consider ergonomics
Be sure your workspace is ergonomically correct - a table that is too low or an uncomfortable chair can cause all kinds of issues. Not only is it hard on your body but is also very detrimental to creativity! If you are like me and sitting for long periods of time - be sure to get up, walk around and stretch a bit throughout your creative process.

MONDAY MUNCHIES: Chocolat-y Cinnamon Coffee

There is just something about a hot cup 'o' joe in the morning that just gets me going! This is a fun recipe that literally spices up that regular home brewed coffee - for even more coffee enjoyment!

Chocolat-y Cinnamon Coffee

1 1/2 cups whole milk
2/3 cup plus 1 teaspoon sugar
1/2 cup unsweetened Dutch-process cocoa powder
( 2-inch) cinnamon sticks
1 strip orange peel, about 1/2 inch by 3 inches
10 whole cloves
2 to 2 1/2 cups hot brewed strong coffee
1/4 cup cold heavy cream
Ground cinnamon or cocoa, for garnish
Whipped Cream

1. In a medium saucepan, whisk together the milk, 2/3 cup of the sugar, and cocoa until smooth.

2. Add the cinnamon sticks, orange peel and cloves and bring to a simmer, stirring, to dissolve the sugar and prevent the cocoa from sticking to the bottom of the pot. Simmer for 2 minutes, then remove from the heat, cover, and let steep for 10 minutes.

3. In a medium bowl, whip the cream with the remaining 1 teaspoon sugar until thick, frothy and peaks form. Set aside.

4. Strain the milk mixture into a coffee pot or carafe and add 2 cups of the hot coffee (2 1/2 cups for stronger coffee flavor, to taste). Pour into cups or small mugs and top each with a dollop of the sweetened whipped cream.

MONDAY MUNCHiES: Chicken Enchiladas

Mexican is by far one of my favorite types of food. With that said I am always on the look out for new quick and easy tex-mex recipes and this one is it!

Easy Chicken Enchiladas

1 can (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup
1/2 cup sour cream
1 cup Pace® Picante Sauce
2 teaspoons chili powder
2 cups chopped cooked chicken
1/2 cup shredded Monterey Jack cheese (about 2 ounces)
6 flour tortillas (6-inch), warmed
1 small tomato, chopped (about 1/2 cup)
1 green onion, sliced (about 2 tablespoons)

1. Heat the oven to 350°F. Stir the soup, sour cream, picante sauce and chili powder in a medium bowl.

2. Stir 1 cup soup mixture, chicken and cheese in a large bowl.

3. Divide the chicken mixture among the tortillas. Roll up the tortillas and place seam-side up in a 2-quart shallow baking dish. Pour the remaining soup mixture over the filled tortillas. Cover the baking dish.

4. Bake for 40 minutes or until the enchiladas are hot and bubbling. Top with the tomato and onion.

MONDAY MUNCHIES: Mini Quiche

Sorry for the delay on this one - I set this to be a scheduled post for this morning but it didnt work and I just got back up here from printing to check it out! Anyway, this week we visit a fun appetizer that I enjoy for breakfast with tea or coffee.

Mini Quiche

6 hard-cooked eggs
6 prebaked puff-pastry shells
1 1/2 tablespoons chopped fresh sage leaves
1/3 cup grated Fontina cheese
Crumbled bacon

1. Slice eggs crosswise and place 1 in each prebaked puff-pastry shells (found in the frozen-food section).

2. Top with fresh sage and grated Fontina cheese.

3. Bake at 400° F until the cheese melts (about 5 minutes). Garnish each tiny quiche with crumbled bacon, if desired.

Top 10 Fonts of 2010

Although I am not a type freak as some would assume - I do still have a great appreciation for correct usage of type. There are so many typefaces out there but I tend to stick to a small line of trusty typefaces that are very versatile.

In looking to add a few new ones to my line this year I came across this article on Ascender Fonts that shows off what they believe to be the top 10 of 2010 on their site. They state "While it is easy to compile a 'top 10' list based on sales or downloads, we thought it would be better to highlight what we feel are the most innovative fonts from 2010" - click below to see all 10.

While I don't find myself loving all of them there are a few that might be a great addition to my line. Do you have any favorites to share either from this list or elsewhere?

MONDAY MUNCHiES: Baby Chick Cupcakes

Happy New Year everyone! Glad to have had the time off but also glad to be back. I hope that you all had a fantastic holiday & were able to spend time with friends and family.

Today we are back with a new recipe as promised. I had quite a bit of time to scout out new ones but this one - although it isn't quite spring - this one couldn't wait!!!

Baby Chick Cupcakes

1 box Vanilla Cake Mix
Buttercream Frosting
4 cups sweetened shredded coconut, toasted
1 piece (10 inches) black licorice lace, cut into 40 (1/3-inch) pieces
20 whole almonds
140 red candy-coated licorice pastels (about 1/3 cup), or pieces of snipped red licorice

1. Bake cupcakes according to package instructions and cool completely.

2. Turn each cupcake upside down on a plate or wax paper which becomes the body of a chick.

3. Spread buttercream frosting on each cupcake to anchor it to the serving plate while you are working. Use a small offset spatula to coat the sides thickly with frosting, and then mound more on top to create a dome shape.

4. Press toasted shredded coconut into the frosting -- it stands in for fuzzy feathers. Hold the plate at an angle while applying the coconut so the excess falls back into the bowl.

5. Place eyes (made from snipped black licorice laces) on chicks using tweezers. Use a whole almond for the beak and red licorice for the feet and comb; both can be pushed into the frosting by hand.

BLOGGING BREAK: Happy Holidays 2010

It has been a very busy week since I lasted blogged. Our new pup Chloe is getting settled into her new home however, due to the very cold weather potty training is moving a little slowly. Otherwise she is a wonderful pup and we just adore her!

In the next month or so Thanksgiving, 2 HUGE art shows, Christmas shopping, Christmas with the family & New Years will come a calling. Those responsibilities along with my Etsy shop orders and a new puppy are going to keep me beyond busy.

With that said, I have decided to take a blogging break for the holidays. I truly need this time to catch up. I will try to keep up on twitter and facebook with quick new posts and also try to keep up with your blogs during my off time.

New blog posts will return MONDAY JANUARY 3, 2011 with the first MONDAY MUNCHIES of the new year.

WELCOME HOME: CHLOE

Please welcome the newest member of our family - Chloe! She is a Morkie puppy which is a special mix between a Yorkie & a Maltese! Right now she is about 2.5lbs and will be about 8lbs full grown!

The blog will be on hold this week while my husband and I take time to acclimate Chloe to her new home and work a bit on potty training! She is so good - not one accident yet and slept through the night.

MONDAY MUNCHIES: Chicken Noodle Soup

Chicken noodle soup is a classic winter craving but I generally tend to enjoy soups with a creamier broth much better. When I ran across this fun creamy chicken noodle soup recipe I was so excited - the best of both worlds!

Chicken Noodle Soup

2 tbsp (30 mL) vegetable oil
12 oz (375 g) boneless, skinless chicken thighs or breasts, cut into 3/4 inch (2 cm) pieces
1 medium onion, chopped
1 carrot, coarsely grated
1 tsp (5 mL) dried oregano
1 tsp (5 mL) basil or 1/2 cup (125 ml) chopped fresh basil
4 cups (1 L) chicken stock
2 tsp (10 mL) Dijon mustard
3 oz (90 g) spaghetti, broken (about 1 cup /250 mL)
2 cups (500 mL) sliced celery
2 tbsp (30 mL) all-purpose flour
2-1/2 cups (625 mL) milk
1 tsp (5 mL) salt
1/2 tsp (2 mL) pepper

1. In a large saucepan, heat half of the oil over medium heat; brown chicken in batches, adding more oil as necessary to prevent sticking. Transfer to bowl and set aside.

2. Add remaining oil to pan; sauté onion, carrot, basil and oregano for about 5 min or until onion is softened.

3. Add chicken stock and mustard; bring to boil. Stir in spaghetti and celery and return to boil, stirring occasionally. Reduce heat, cover and simmer for about 8 min or until noodles are almost tender.

4. Add chicken along with any accumulated juices; cook for about 5 min longer or until noodles are tender.

5. Whisk flour into milk and gradually whisk into soup; simmer, stirring, for about 3 min or until slightly thickened. Add salt and pepper.

MONDAY MUNCHIES: Chicken & Shrimp Jambalaya

Looking for a fun & spicy cajun dish? Then this is for you! Warm yourself up with this fun cajun style casserole style dish which is both yummy and simple.

Chicken & Shrimp Jambalaya

1 tablespoon olive oil
4 skinless, boneless chicken breast halves (about 1 pound), cut into 1-inch pieces
1 large onion, diced (about 1 cup)
1 medium green pepper, diced (about 1 cup)
2 teaspoons Cajun seasoning
1 can (10 3/4 ounces) Campbell's® Condensed Tomato Soup
2 cups water
1 cup uncooked regular long-grain white rice
1/2 pound fresh or thawed frozen medium shrimp, peeled and deveined
1 large tomato, chopped (about 1 1/2 cups)
Chopped fresh parsley

1. Heat the oil in a 12-inch skillet over medium-high heat. Add the chicken and cook until well browned, stirring occasionally.

2. Stir the onion, pepper and Cajun seasoning in the skillet and cook for 2 minutes.

3. Stir the soup, water and rice in the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 20 minutes.

4. Stir in the shrimp and cook, uncovered, for 10 minutes or until the shrimp are cooked through and the rice is tender. Stir in the tomato and parsley, if desired. Let stand for 10 minutes.

MONDAY MUNCHIES: Rich Hot Cocoa

It is getting to be that time of year when I seriously crave a nice rich warm drink! This week I set out to find an amazing Hot Cocoa recipe and I found it - this hot cocoa is not for the faint of heart!

Rich Hot Cocoa

1/4 cup granulated sugar
1/2 cup half- and- half
1 tbsp butter
8 oz Nestle Dark Chocolate baking bars, finely chopped

1. Take a small heavy pan, add granulated sugar and half-and-half in it. Keep it to boil slowly and then take off the pan from heat.

2. Add chocolate and butter in it. Mix it until the chocolate gets melted and mixture becomes smooth.

3. When it gets ready - serve it warm over favorite dessert, fresh fruit and ice cream or place it in the resalable container and keep it in the refrigerator. Again heat it in microwave for 15 to 30 seconds on high power and mix it and then use it.

MONDAY MUNCHIES: Breakfast Pizza

We haven't had a breakfast recipe in a while and you know how I love breakfast! Anyway, this recipe proves that you can make any meal into breakfast - yeah!

Breakfast Pizza

1 lb hot breakfast sausage
3 eggs
2 tablespoons milk
1/8 teaspoon black pepper
½ teaspoon salt
½ cup cold water
2 cups Bisquick
2 tablespoons grated Parmesan
1 cup shredded cheddar
1 cup defrosted hash browns

1. Preheat oven to 400 degrees F.

2. Brown sausage, drain and chop.

3. Mix the water and Bisquick to make a soft dough. Smooth this into a 12-inch pizza pan.

4. Spoon sausage over crust, followed by mashed hash browns then cheddar cheese. You can prepare it up to here the night before if you like.

5. Beat the milk, eggs, salt, and pepper. Depress the center of the pizza so the eggs make a pool when poured on.

6. Sprinkle Parmesan over the egg pool and bake for 20 to 25 minutes.

7. Serve with sour cream, salsa, and Tabasco.

MONDAY MUNCHIES: Hoot Owl Cupcakes

In my search to find some fun fall cupcakes I was completely smitten by these awesome Halloween Hoot Owl cupcakes - seriously - how cute are these????

Hoot Owl Cupcakes

CUPCAKES
1 18.25oz package butter recipe white cake mix
1 1/4 cups water
1/2 cup butter softened
3 egg whites
1 teaspoon almond flavoring
1 cup sweetened flaked coconut

FROSTING
3 1/2 cups powdered sugar
1 8oz package of cream cheese, softened
1/4 cup butter softened
1 tablespoon milk

DECORATIONS
48 butter-rum flavored hard candies with holes
Milk chocolate or semi-sweet chocolate chips
1/2 cup sliced almonds
24 whole cashews

1. Heat oven to 350°F.

2. Combine all cake ingredients except coconut in large bowl. Beat according to package directions. Gently stir in coconut. Fill paper-lined muffin cups two-thirds full. Bake for 19 to 22 minutes or until toothpick inserted in center comes out clean. Cool completely.

3. Combine all frosting ingredients in medium bowl. Beat at medium speed, scraping bowl often, until creamy.

4. Frost cooled cupcakes. Place 2 butter rum candies on each cupcake for eyes. Dip bottoms of chocolate chips into frosting; place onto each candy circle to form center of eye. Arrange almonds above eyes for feathers. Add cashew for beak.

Store refrigerated in container with tight-fitting lid.

OLIVE & OATMEAL

NEW JERSEY SCARF #4

Hopefully you are not sick of these yet but I just love them! I am almost ready to start listing the apron's as well but photos must be taken! Anyway, now I am up to three new scarves in the shop and this will be my 4th! Total of 9 to come - some are being printed today!

These are so fun to create and for the record - they do start out as a big pile of fabric. Basically this is what I do:

1. Cut fabric down to 90" x 13"
2. Screen print design on each facing end
3. Serge all edges

It is funny how so much time can boil down to three steps but that really is how it happens!

JERSEY SCARVES

MONDAY MUNCHES: Chicken Chili

Chili is something I always crave for fall & winter. In searching for a new fun chili recipe I ran across this recipe for a chili that is not only healthy but yummy!

Chicken Chili

2 (15 oz.) cans white beans, rinsed and drained
4 cups low-sodium chicken broth
1 tablespoon vegetable oil
2 whole bone-in chicken breasts (3 lb.)
Salt and pepper
2 onions, chopped
4 cloves garlic, chopped
2 (4 oz.) cans roasted green chilies, drained
1 tablespoon ground cumin

1. Place beans and broth in a slow cooker. Cover and cook on high until beans are tender, 2 hours.

2. Warm oil in skillet over medium-high heat. Sprinkle chicken with salt and pepper. Place chicken skin side down in skillet; cook until brown, about 4 minutes. Turn and cook for 2 minutes more. Transfer to a plate; remove and discard skin. Drain all but 2 Tbsp. fat from skillet. Add onions and garlic; cook until softened, 5 minutes. Add onion mixture, chilies, 1 cup water and cumin to slow cooker. Stir; add chicken.

3. Cook on low for 6 hours, stirring twice. Remove 1 cup beans plus 1/2 cup liquid from slow cooker. Puree in a blender; return to slow cooker. Remove chicken, shred it and return to slow cooker. Spoon into individual bowls and serve.

My new line of JERSEY SCARVES are finally available! This is the first in a line of 5-8 designs that will all be available in my Etsy shop within the next week! The scarves are a full 90" long for wrapping various styles. The edges are fully finished and hand serged by me. These are truly unique creations and are SO soft and comfy - quoted by many of the patrons at my last show!

Well, I finally got some shots of my booth set up for Market Day this month! This is a fantastic small show but I only have a 6ft x 5ft booth space - just enough for a table and I have one back wall to showcase my screen printing goodies.

This month I updated my booth to go with my new logo design. Ifound these awesome baskets from Target and used that palette to base my new logo colors on. The reason for the logo & color change was to include my screen printed work within my brand. Sweet Harvey LLC is dropping the letterpress and adding the tagline "Pen.Paper.Fabric.Ink." to cover all of the aspects of my work.

MONDAY MUNCHIES: Autumn Punch

For those of you with an autumn gathering coming up - this is for you! Spice up your meal with this fantastic Autumn Punch. Quick and easy but so yummy and pretty!

Autumn Punch

2 teaspoons whole cloves
1/2 of a vanilla bean, split lengthwise
1 64-ounce bottle apple-cranberry juice
4 medium purple and/or green plums, pitted and sliced
1 750-ml bottle Gewurztraminer, or other fruity white wine*
Ice cubes

1. Place cloves and vanilla bean in center of a double-thick 6-inch square of 100-percent-cotton cheesecloth. Bring corners of cloth together; tie closed with clean string. Pour apple-cranberry juice into a large container or pitcher. Add plums and spice bag. Cover and chill for 4 to 24 hours.

2. Remove and discard cheesecloth bag. Stir in Gewurztraminer. Serve beverage and plum slices over ice. (Or omit the ice and heat the juice mixture and wine in a 4-quart Dutch oven until hot. Serve in heatproof mugs.) Makes 10 to 12 servings.

*Nonalcoholic Option: Substitute two 12-ounce cans chilled ginger ale for the Gewurztraminer, and serve over ice.

MONDAY MUNCHES: Cinnamon Apple Crumb Bars

A little breakfast, a little treat - what a great mix! This crumb cake is so amazing and filled with flavor - you must try it! You can also vary by baking with or without nuts and also by using pre-made filling for a little less work!

Cinnamon Apple Pecan Crumb Bars

FOR THE APPLES:
3 medium fuji apples, peeled, cored and cut into a 1/2" dice
1/2 cup chopped pecans
1/4 cup flour
1/4 cup brown sugar
1 1/4 tsp ground cinnamon
1/2 tsp kosher salt

FOR THE CRUMB:
2 sticks (1 cup) butter, soften
2 cups flour
1/2 cup sugar
1/2 tsp baking powder
1/2 tsp kosher salt
1 egg

FOR THE ICING:
2 oz cream cheese, softened
1/4 cup powdered sugar, sifted
2 tbsp milk
1/4 tsp kosher salt
1/4 tsp ground cinnamon

1. Preheat oven to 350 degrees. Lightly grease an 8x11.5" glass or ceramic baking dish.

2. Place all ingredients for the apples into a mixing bowl. Toss to coat and evenly distribute all ingredients.

3. Place first 5 ingredients for the crumb into a mixing bowl. Blend the ingredients together using a pastry blender or a fork until the butter has been incorporated and there are crumbs the size of peas. Add the egg to the crumb mixture and lightly stir just until the egg has been incorporated. Try not to over work the mixture. You want for there to still be pea-sized crumbs after incorporating the egg.

4. Reserve 1 heaping cup of the crumb mixture. Pour the rest of the crumb into the prepared baking dish. Using your hands or the back of a spoon, gently press the crumb mixture into the dish to form a level crust.

5. Next evenly distribute the apple mixture over the crust and sprinkle the reserved crumb mixture evenly over the apples.

6. Bake for about 50 minutes or until crumb is golden and apples are soft.

7. Remove from oven and cool for 1 hour.

8. While the bars are cooling, make the icing. Add all ingredients into a mixing bowl. Whisk or beat until smooth.

9. Once the bars are cooled drizzle with the cream cheese icing. Cut into bars and enjoy! Bars can be made 2 days in advance. Simply cover the bars once they've cooled to room temperature.

MONDAY MUNCHIES: Black Bean Burger

Looking for a burger that takes great and isn't full of calories - look no further! Watching ones weight can be a challenge but having great light recipes is the key to success!

Black Bean Burger

1 (2-ounce) hamburger bun, torn into pieces
3 tablespoons olive oil, divided
2 teaspoons chopped garlic
1 (15.25-ounce) can black beans, rinsed and drained
1 teaspoon grated lime rind
3/4 teaspoon chili powder
1/2 teaspoon chopped fresh oregano
1/4 teaspoon salt
1 large egg, lightly beaten
1 large egg white, lightly beaten

1. Place bun in a food processor; process 4 times or until crumbs measure about 1 cup. Transfer to a bowl.

2. Combine 1 tablespoon oil, garlic, and beans in processor; pulse 8 times or until beans make a thick paste. Scrape bean mixture into bowl with breadcrumbs. Stir in rind and remaining ingredients. With moistened hands, divide bean mixture into 4 equal portions (about 1/3 cup mixture per portion), shaping each into a 3-inch patty.

3. Heat remaining 2 tablespoons oil in a large nonstick skillet over medium-high heat. Add patties to pan; reduce heat to medium, and cook 4 minutes or until bottom edges are browned. Carefully turn patties over; cook 3 minutes or until bottom edges are done.

MONDAY MUNCHIES: Banana-Cinnamon Waffles

Back on the breakfast wagon again! I just love breakfast and waffles are a sure win for breakfast any day of the week!

Banana-Cinnamon Waffles

1 cup all-purpose flour
1/2 cup whole wheat flour
1/4 cup buckwheat flour
1/4 cup ground flaxseed
2 tablespoons sugar
1 1/2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 1/2 cups fat-free milk
3 tablespoons butter, melted
2 large eggs, lightly beaten
1 large ripe banana, mashed
Cooking spray

1. Lightly spoon flours into dry measuring cups; level with a knife. Combine flours, flaxseed, and next 4 ingredients (through salt) in a medium bowl, stirring with a whisk.

2. Combine milk, butter, and eggs, stirring with a whisk; add milk mixture to flour mixture, stirring until blended. Fold in mashed banana.

3. Preheat a waffle iron. Coat iron with cooking spray. Spoon about 1/4 cup batter per 4-inch waffle onto hot waffle iron, spreading batter to edges. Cook 3 to 4 minutes or until steaming stops; repeat procedure with remaining batter.

4. Top these lightly spiced waffles with cinnamon sugar, sliced bananas, and/or a drizzle of maple syrup

The majority of my show season = me in a booth for more than 8 with no access to food except what I bring. The food I bring must be easy to eat & not to messy so I dont 1. end up getting on the product and 2. don't end up with it on my face while talking to people. Here is a quick snack mix recipe that should fit the bill for any future outing!

Microwave Snack Mix

2 (1-oz.) envelopes Ranch dressing mix
1/2 cup vegetable oil
3 cups crisp oatmeal cereal squares
3 cups corn-and-rice cereal
3 cups crisp wheat cereal squares
2 cups pretzel sticks
1 cup dried cherries
1 cup candy-coated chocolate pieces

1. Whisk together Ranch dressing mix and 1/2 cup vegetable oil in a large microwave-safe glass bowl. Stir in oatmeal cereal squares and next 3 ingredients.

2. Microwave mixture at HIGH 2 minutes, and stir well. Microwave at HIGH 2 more minutes, and stir well. Spread mixture in a single layer on wax paper, and let cool 30 minutes. Add cherries and candy pieces. Store in an airtight container up to 5 days.

MONDAY MUNCHIES: Chocolate Hazelnut Ice Cream Sandwiches

I know I just did a sweet treat a few weeks ago but I just thought these sounded too good not to feature this. Especially since it is almost the end of summer!

Chocolate Hazelnut Ice Cream Sandwiches

16 chocolate wafers (such as Nabisco Famous Chocolate Wafers)
1/3 cup chocolate hazelnut spread, (such as Nutella)
1 pint premium chocolate ice cream
1/3 cup cup chopped toasted hazelnuts

1. Spread flat side of each wafer with hazelnut spread; set aside. Scoop 8 ice cream balls, about 3 tablespoons each; keep in freezer until ready to assemble.

2. To assemble sandwiches, remove ice cream balls from freezer; let stand 1 minute to soften. Place 1 cream ball on 8 hazelnut-spread wafers. Top with remaining wafers; press gently together.

3. Sprinkle edges with nuts. Place sandwiches on baking sheet lined with waxed paper; freeze 3 hours or until firm. To store, freeze up to two weeks in self-sealing plastic bags. Makes 8 sandwiches.

MONDAY MUNCHIES: Sparkling Cranberry Rose

It has been a while since I shared a drink recipe so I thought it was time for one! This recipe is a mix of sweet & tangy and best of all you can have a little "punch" or not - your choice!

Sparkling Cranberry Rose

8 to 10 sugar cubes
1 to 1-1/4 cups cranberry juice
1 750-milliliter bottle sparkling rosé wine, champagne, or sparkling white grape juice
Fresh cranberries (optional)

1. Place one sugar cube in the bottom of 8 to 10 chilled champagne flutes or other tall, narrow glasses. Pour 2 tablespoons cranberry juice into each glass.

2. Fill each glass with sparkling rose wine or champagne. If desired, place a wooden skewer of fresh cranberries in each glass. Makes 8 to 10 servings.

MONDAY MUNCHIES: Coconut Cupcakes

My husband and I generally have the same taste in food however, coconut is one thing we dont share a strong love for! I adore coconut so when I ran across this great recipe I just had to share!

Coconut Cupcakes

2 3/4 cups butter, at room temperature
2 cups granulated sugar
4 large eggs
2 teaspoons each vanilla and almond extracts
3 cups all-purpose flour
1/2 teaspoon each baking powder, baking soda, and salt
1 cup coconut milk
1 1/2 cups flaked coconut, plain or toasted
8 ounces cream cheese, at room temperature
2 3/4 cups powdered sugar

1. Preheat oven to 350°. In a large bowl, cream together 2 cups butter and granulated sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Mix in 1 1/2 teaspoons each vanilla and almond extracts.

2. In another large bowl, combine flour, baking powder, baking soda, and salt. Add to butter and sugar mixture in 3 batches, alternating with coconut milk. Stir 1 cup flaked coconut into the batter.

3. Fill 30 paper-lined muffin cups (1/2-cup capacity) in two or more muffin pans about 2/3 full with batter. Bake until a toothpick inserted into the center of a cupcake comes out clean, 15 to 20 minutes. Cool for 10 minutes before removing muffins from pans. Cool completely.

4. Meanwhile, in a medium bowl, beat cream cheese, 3/4 cup butter, and 1/2 teaspoon each vanilla and almond extract until smooth. Gradually beat in powdered sugar. Frost cupcakes and sprinkle with remaining coconut.

MONDAY MUNCHIES: Sizzling Fajitas

Just felt like a little sizzle this week and found this great recipe for super easy Fajitas. Ready in less than 20 minutes and super yummy!

Sizzling Fajitas

2 tablespoons vegetable oil
4 skinless, boneless chicken breast halves OR
1 beef sirloin steak (about 1 pound), cut into strips
1 medium green or red pepper, cut into 2-inch-long strips (about 1 1/2 cups)
1 medium onion, sliced (about 1/2 cup)
1 1/2 cups Pace® Picante Sauce
8 (8-inch) flour tortillas, warmed
Guacamole

1. Heat the oil in a 12-inch skillet over medium-high heat. Add the chicken or steak and cook until well browned, stirring often.

2. Stir the pepper and onion in the skillet and cook until they're tender-crisp. Stir the picante sauce in the skillet and cook until the mixture is hot and bubbling.

3. Spoon about 1/2 cup mixture down the center of each tortilla. Top with additional picante sauce. Fold the tortillas around the filling. Serve with the guacamole, if desired.
